Smooth(ie) Sailing

I consider myself a breakfast aficionado. For me this morning meal is the most important part of the day, and on weekends I always take my time preparing a hearty and healthy breakfast for my husband and I. However, between Mondays and Fridays, I go rogue, and reach for sugary cereal, or microwave a bowl of bland oatmeal, or even worse heat a sodium and preservative laden breakfast burrito. But as of last week, I said “no more” to this treachery!  I drew a line in the sand, and course corrected. I made a promise to myself that I will no longer be a lover of breakfast, who doesn’t show her breakfast any love; and that’s how I dreamt up this fruit, protein, and fiber rich smoothie bowl. (I really did dream about this…seriously)

Now you’re probably thinking “who the hell has time to make themselves an Instagram-worthy breakfast at 7 in the morning?!” And  I agree with you, it’s not easy but it’s worth it. Allowing yourself the time to create a delectable breakfast that is also good for you is infinitely more rewarding than 10 more minutes of sleep. By creating something for yourself, you are starting the day by making your self a priority–and that is always good for the soul. Also, rest assured that this smoothie bowl can be prepped the night before, so all you have to do is devour this visual treat in the morning, and maybe snap a few photos.

Serves 1

Ingredients

1/2 avocado

4 whole strawberries, stems removed

1 strawberry sliced

1/2 banana, peeled

1/2 banana sliced

1/2 cup plain greek yogurt

1/2 cup organic whole milk or nut milk of your choice

1 kiwi sliced

1 tsp chia seeds

1 tsp honey

Directions

  1. In a blender, mix avocado, whole strawberries, peeled banana, greek yogurt, and milk until smooth.
  2. Pour into a bowl, top with sliced fruits, sprinkle chia seeds, and drizzle with honey.
  3. Eat with love!

Tips: 

Chia seeds are one my favorite health foods, they are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. However, if you are assembling this smoothie bowl the night before, don’t add the chia seeds until the morning. Chia seeds absorb moisture, and becoming gelatinous if left sitting in liquid. I add them for both texture and their health benefits, so I definitely recommend waiting right before eating.
